Bacon-wrapped Halloumi Bites

Halloumi wrapped in crisp bacon with a drizzle of honey, served with sweet chilli aioli for dipping. A perfect appetiser or side!

- Preheat your oven to 220°C/200°C fan/gas mark 7.
- Drain and halve halloumi lengthways. Quarter each half lengthways to make evenly sized batons.
- Add to a bowl of cold water.
- Halve the bacon widthways (use scissors if easier), then stretch each piece slightly using the back of a knife. Pat dry with kitchen paper.

- Remove the cheese from the water and pat dry with kitchen paper.
- Wrap each halloumi slice with a piece of bacon. Place on a lined baking tray.
- Bake the bacon-wrapped cheese on the top shelf of your oven until golden, 15-20 mins. Turn the tray halfway through. IMPORTANT: Wash hands and equipment after handling raw meat. Cook bacon thoroughly.
- Meanwhile, pop the ranch and sweet chilli sauce into a small bowl. Mix together until combined.

- Once cooked, remove the cheese from the oven.
- Transfer to a serving plate.
- Serve with the sweet chilli ranch alongside for dipping.
